an easy autumn chili recipe

Cooking is something that brings me so much happiness and joy during the cooler months. I love standing over the stove and stirring a hearty stew or soup while I watch the breeze through my kitchen windows.

This is a recipe that I have adapted from a blog called The Ambitious Kitchen. It is gluten and dairy free but can be adapted to any dietary restrictions!

Cozy Autumn Turkey Chili



Serves 6 / Prep time: 45-50 minutes


  • 1 yellow onion, chopped

  • 1 red pepper, chopped

  • 3 cloves of garlic, chopped

  • 1 can of corn, rinsed

  • 2 cans of red kidney beans, rinsed

  • 1 28oz can crushed tomatoes

  • 2 tbsp olive oil

  • 1 1/4 cups chicken broth

  • 1lb ground turkey

  • 3 1/2 tbsp chili powder

  • 2 tsp ground cumin

  • 1 tsp oregano

  • 1/4 tsp cayenne pepper

  • 1 tsp garam masala (optional)

  • 1 tbsp coconut aminos or Worcestershire sauce (optional)

  • 1/2 tsp salt

  • Tortilla chips, sour cream, avocado, and cheese for garnish


  • Put oil in a medium sized pot on medium heat. Add onion, red pepper and garlic and simmer for 5-7 minutes.

  • Add ground turkey and sauté until no pink is left.

  • Add spices and stir for about 20 seconds.

  • Add corn, beans, crushed tomatoes, and chicken (or vegetable broth). Bring to a boil and then put on low heat for about 35 minutes, covered.

  • Remove lid and cook uncovered for about 15 more minutes. Season to taste during this time with salt, pepper, and any additional spices you’d like to add.
